The dark-amber Aecht Schlenkerla Weizen is unfiltered, unpasteurized, bottle-conditioned. This smoked Weizen is brewed in Bamberg, Germany, with the following ingredients: Water, wheat malt, barley malt, aroma hops and top-fermenting Bavarian style Wheatbeer yeast. Only the barley grain is smoked during the malting process, while the wheat malt remains unsmoked (theoretically the wheat could be exposed to the Original Schlenkerla smoke kilning process as well. The smokiness of the resulting wheat, though, would be almost insignificant as the wheat is not able to retain the smoky flavor due to its lack of spelt). After fermentation in the fermentation cellar a precise amount of unfermented wort and original top-fermenting yeast are added to induce secondary fermentation in bottles and kegs. The ensuing Original Bottle Conditioning (Keg Conditioning) creates a complex smokey taste profile intertwined with banana, clove, vanilla like flavors.

"Fränken Bierausflug, Day#4, Brewery#16, Beer#33. Vom Faß at Schlenkerla, as an accompaniment to my meal of Bamberger Zwiebel (Bamberg Stuffed Onions). A cloudy copper color with a thick, foamy tan head. Nose of smoked banana; rich and aromatic. Effervescent but smooth palate. Fine flavors of spicy banana, citrus, firm smoked BACONY malt. A perfect match for the meal."

"Aroma is nice and strong and wheaty with just a hint of citrus and a "rubbery" undertone. Appearance is a dark, cloudy honey-brown with a very thick off-white head. Flavor is thick and wheaty with a smoky undertone and just a touch of lemon - not complex, but mouth-filling and not at all thin. Texture is delightfully smooth. Aftertaste gives the feeling of having just eaten some smoked or barbecued food."

"Bottle: Poured a clear dark brown color weizen with a nice foamy head with good retention and some lacing. Aroma is dominated by the smell of smoked bacon. Taste is dominated as well by some smoked bacon with some malt. Medium body with some great carbonation. Interesting but I couldn’t really detect the wheat from the smoke and I would say that the Urbock is my favourite form this brewer."

"Pour was deep cider color with nice fluffy head and lacing. Strong wheat aroma mingled with smoke. The flavor was just so overpowered by the flavor of smoked undercooked bacon that you could barely taste anything else. Bordering on sickly."

"Pours a thick, hazy amber with cloud-like head leaving excellent lacing. The smokiness is the primary scent of the aroma, although hops, citrus, vanilla, and spices are apparent. The mouthfeel is mild-bodied, smooth, although a little thin. The flavor is made up of the smoked barley, citrus, and banana. Although it is unique, the "smoked" flavor must be an acquired taste. I'd rather not have it in beer, as I have never been a "smoked" fan."
