"This brew poured a hazy golden orange color topped with a thick rocky white head. The aroma is fruity, yeast, and spice. The flavor is citrus with banana, grapefruit, and orange. Somewhat of a tart/sour note. Overall this is excellent and complex."

"Presentation: It was poured from a stubby brown 11.2oz bottle into a signature Chimay chalice that came with the gift set.
Appearance: It has a slightly hazy, peachy golden colored body with a thick, heavenly, white and foamy head. It is supported by an active carbonation and it very slowly recedes to a much thinner creamy layer of foam that leaves behind sticky white lacing.
Smell: The aroma has delicate fruity character with dry yeast notes and a just a hint of medicinal phenols and hops in the distance.
Taste/Mouth feel: The flavor has mellow fruity notes of Muscat, golden raison and apple mixing with pale malted grain and dry earthy yeast. Hop flavor is mild but adds a mild slash of herbal spice and mellow bitterness. Its 8%abv is well hidden but adds to the overall complexity and smooth rounded mouth feel. It finishes with some light phenol flavors and mild spicy hops fading off the tongue. Its texture has perfect carbonation and a nice rounded feel with a medium body that is very drinkable and sophisticated.
Notes: I love Trappist beers and this is an absolute joy to drink. Monks Rock!!!

"I've had the Chimay products several times over the years, but this review is based on the beer I sampled at a Chimay tasting at the Brickskeller in Washington, DC on September 24th, 2008. The event was hosted by Bob Tupper and the featured speaker was Luc "Bobo" Van Mechelen of Manneken Brussels Imports. At this tasting we drank from both the 750ml and 330ml bottles.
The beer came out and had an amber color to it with an orangy hue to it. There's a slightly off-white head that left behind a moderate amount of lacing when consuming. The aroma was light and fruity, with a slight hint of sugary sweetness to it.
In the flavor you pick up on the moderate sweetness from the Belgian sugars used on this one, mixed in with the yeasts. There's a very subtle hint of hops in there as well. The 8% alcohol content is not overpowering, but you do notice it in drinking it. The 750ml bottle overall has a smoother, less carbonated mouthfeel to it. Either way, it's a well crafted, nice sipping beer. "

"It poured a massive white cap, the body was interesting blend of colors depending on the light, it was yellow, and amber very cloudy, it reminded me of a good hefeweizen. Thick lace left on my glass, flavor was a very subtle mix of friut and spices, with malty overtones.Slight scent and flavor of alcohol but its well hidden and smooth."

"Pours a hazy golden amber color with a thick white head and good lacing. Citrus, spices, yeasty aroma. the taste is mild sweetness, fruity, spice with mildly dry finish. A bit fizzy. Mouthfeel is rich, creamy and smooth."
