"Bought myself one of those nice bottles. Poured a deep brown with a very thick, foamy tan head that settles down quickly. Not too much lacing. The aroma is a bit sweet, malty with yeast backing it, and some sort of dark fruit. A smooth, albeit slightly carbonated mouthfeel. The flavor is sweet malts, with plums, raisins, figs, and that hint of alcohol. The taste definitely changes as this beer warms, as the alcohol becomes slightly more prominent and some of the fruit flavors switch in dominance. A very good beer."

"Presentation: It was poured from a stubby brown 11.2oz bottle into a signature Chimay chalice that came with the gift set.
Appearance: The body has a beautiful deep dark brown colored body with dark ruby highlights and a slightly hazy body. The head builds up tall and thick with an abundance of small tiny, tight packed bubbles. It has a creamy off white color and good retention as it slowly settles down to a light thin covering. Lacing is very slick and minimal.
Smell: The aroma has an intoxicating mix of sweet malt, earthy yeast and dark fruity esters.
Taste/Mouth feel: Ageing only adds more complexity and character and each sip will reveal different flavor notes. To start there is a nice lightly roasted, almost smoky malt with different layers of dark fruits that is revealed as it warms. Plums, figs, dates, dark and golden raisins are some fruits I noted and all is surrounded buy the presence of a pleasant warming port like alcohol. Its palate is full and well rounded with a smooth feel and mellow carbonation.
Notes: For me this is about as close to perfect as a beer could be. It is an absolute pleasure for all the senses.

"I've had the Chimay products several times over the years, but this review is based on the beer I sampled at a Chimay tasting at the Brickskeller in Washington, DC on September 24th, 2008. The event was hosted by Bob Tupper and the featured speaker was Luc "Bobo" Van Mechelen of Manneken Brussels Imports. At this tasting we drank from both the 750ml and 330ml bottles.
This beer has a dark brown body to it with a creamy, thick tan head on it. The shocker here is in the aroma. This is a 9% alcohol content beer and you really don't pick up much in the way of the alcohol content in the aroma. You do pick up on a dark sugar / dark fruit combination in the aroma though and it smells very good.
In my book, the taste of this the Blue makes it the King of Chimays. It is the ultimate Belgian sipping beer. Mixed in with the sugar, plums, and raisin taste that you pick up on the aroma, you also pick up a very nice malty flavor that really mellows out the beer. The alcohol content is not easily picked up in the flavor, so watch out. This one will get you drunk fast. Overall, the Chimay Blue is absolutely an awesome drinking beer. "

"I saved this one a couple of weeks for my 200th review. Bottled on 04/08. The best of the chimay line in my humble opinion, poured a murky, deep brown body, sediment visible, with a thin light tan head, Aroma and flavors of fig, rasins, caramel, malts and a little nutty, flavor changes with the temperature. Mouthfeel is full bodied and smooth and despite the high alc. content it was hardly noticeable. Top notch brew, only drawback to it is the price, but you gotta treat yourself from time to time! "

"Poured a very dark brown with a foamy off-white head. The aroma of malt, dried fruits and brown sugar. The mouth feel is medium and smooth. Sweet flavors dominate when first poured and more dried fruit flavors come through as it warms. Overall...well, add it to my list of favorites."
