A neo-lambic ale that goes through both a yeast and bacteria fermentation and is then aged on oak chips and 400 pounds of Delaware peaches. This beer is very tart and complex. It arrives cork-finished and bottled-conditioned in champagne bottles.

"Pours with a slightly cloudy, light orange body wtih no head or lacing. Tart and sour wtih a nice barnyard and some lemony notes and a touch of underlying sweetness in the nose. Light, crisp and dry."

"10.31.04 750ml bottle. Another treat from an unknown benefactor at the Heavyweight open hosue. Light in color, golden; big-time head of white foam. Aromas of fruit salad syrup, peach. Sour and tart flavors dominate Shockingly fresh tasting, unripe fruits, sharp and crisp. A very pleasant surprise -- not your typical DFH brew, whatever that is."

"Looks like I’m going against the grain on this one. First the bottle opened with authority and had good carbonation. Poured a hazy light honey colored brew. Tart but not on the level of a Cantillon or Oud Beersel.Not getting much peach flavor but it was enjoyable none the less."
