Sah'tea
A modern update on a 9th century Finnish proto-beer.
Brewed with rye, we caramelize the wort with white hot river rocks, then ferment it with a German Weizen yeast. In addition to juniper berries foraged directly from the Finnish country-side we added a sort of tea made with corriander, caramamom, lemon grass, Indian Black Tea, and ramps leaves. The spicing is subtle and balanced and Sahtea is a highly-quaffable, truly-unique brew with a full-mouth feel.

"On draft at the Rehoboth brewpub after the first 75mi of biking for MS. Pour was full bodied and cloudy orangey hefeweizen type color. The head was like that of a witbier and the aroma certainly reminded me of a wit (bartender said it was like a German Wheat, not quite so). The aroma was bananas, coriander, citrusey lemon, other non-descript spices. The flavor followed and the juniper was detectable along with the other listed spices. A tea leave finish topped it off. Full bodied, heavy, yet not high in alcohol as with the Palo Santo and Theobroma that they also had on draft."
