Blanche Des Moines is brewed on 60% pilsener malt and 40% unmalted wheat. In spite of a close affinity to the Flemish witbiers this is somewhat different. It is brewed with a higher proportion of unmalted wheat which adds even more of the special, wheaty notes that are so characteristic for the style. Naturally the beer has been added coriander and dried orange peel. Furthermore an extract of licorice root has been added. Primary fermentation is with a classical Witbier yeast and the beer is bottle fermented.

"An average beer would be about the best thing I could say about this one. It didn't really have one particular thing about the beer that stood out, but it was a decent beer all the way around. An aroma of oranges, herbaceous and hay. Very light in the mouthfeel with an overabundance of carbonation (what is is with Belgian's and carbonation?). Flavors of spiced oranges and wheat. Sublte yeast characteristics make an appearance, as does corriander and lemongrass. Good enough to be refreshing. "

"This Belgian Wit pours a light yellow gold color from a cork 750ml bottle. Large sized white foamy head, with good retention and nice lacing. The aroma is wheat, lemon and citrus. A lighter bodied wit. The malts are fruity and wheaty. Lots of lemon, lemon peel and citrus flavors as well as some wheat and spice. Lively carbonation, really lively, fizzy is the word. It’s a little thin tasting as well, probably due to the lower alcohol content. It is light and refreshing at least. Kind of a cross between a wit and a tart raddler, a nice beer for a warm evening. Mouthfeel is a touch thin. Finish is clean and crisp. Aftertaste is slightly tart."
