In the little town of Bavay, only a few miles from the border with Belgium, the Theillier family has crafted its fine bière de garde for generations. The charming brewery is built into the Theillier family home, which was constructed in the 1600's on sturdy Roman foundations. La Bavaisienne is artfully brewed, in very small batches, using a resourceful combination of ancient and modern equipment.

"Bottle courtesy of Turdfurgeson: Poured a deep slightly hazy brown color ale with huge white foamy head with some good retention and some good lacing. Taste of deep malt with some balance sweetness and some spicy yeast. Body is full with some great carbonation and no alcohol could be detected. Lots of character with a nice creamy body. The balance in this beer is just incredible. I would love to try this again."

"Bottled (As ambree). Amber colour, huge beige/off-white head. Aroma is malts, yeast, caramel and some earthy notes. Flavour is quite the same. Fullbodied, but quite boring. "

"Hmmmm i loved this beer. Poured an amber with massive head with amazing lacing. Aroma was citrusy and spices. Flavor was muc hteh same was a little sweet. Aour in the aftertaste."

"Brewtopia’04. Smells sweet, cugary, and cherry-ish with some musty old fruit. A pile of sweet maltiness dumps from the glass and splashes down all over the palate. Sweetness yields to sour and bitter. What a lovely find on the Shelton Bros table at the fest, not an everyday beer, to be sure. It’s not so Belgian yeasty as man French beers tend to be, but it IS quite peppery. Wonderful."

"The deep amber body is topped by a voluminous whipped custard head that clings to the glass for dear life. This is perhaps the maltiest of the style that I’ve had to date with rich caramel malts providing the base of the aroma and flavor. There’s a good bit of apple peel fruitiness and the flavor is a tad sweet. The only thing that bugs me about the beers is a slight harshness in the lingering bitterness of the finish. But the bitterness seems to fade as I drink it, so it could have been something to do with the temperature. Definitely gets better as it warms."
