This beer has arisen out of our desire to use the Kolsch ales of Cologne, as the foundation stone from which to design our own idiosyncratic ale; in other words, while the Kolsch style characteristics will remain in the back of our minds, we want to develop the beer using our own imaginations and build into the structure of the beer signature nuances.
The Kolsch ales are unique in the sense that they are fermented out at temperatures that sit inbetween traditional warm-fermenting ales and cold-fermenting lagers. The result is a beer with great body and presence on the palate without the normal 'fruity' character of the ale family.
The name itself - Copperhead- relates to the old and cumbersome hard hats worn by the pearl divers of yesteryear.
