Since wedding season is approaching, Papago will feature a new seasonal "Bride’s Ale" called Bridalweisse. Bride’s ale is an old tradition were the bride’s family brewed a special beer and served it at the wedding. The term "Bridal" resulted from this tradition. The Papago Bridalweiss is a unique beer style called a Schwarzweiss. It is dark like a Stout and has a slightly roasted, chocolaty and clove like aroma. It has the taste of a light German style Hefeweizen with banana flavor. It is not anything like you would expect from a dark beer. Our Bridalweisse was brewed in honor of Papago’s own Leah Ryan’s wedding to Jeff Huss of BJ’s Brewing on June 7th, 2008.

"Sampled on tap at Papago, September 2008
Arrives from the tap with a frothy, pale browned, tan colored head. The beer is a dark brown color with a light haze to it. This has quite the weird aroma to it; a mix of toasted bread notes, some weird breakfast cereal type thing, some phenolic plastic aromatics that almost are smoky. The aroma is just really funky and it is hard to describe how weird it really is.
The flavors are sharp and roasted with a bitter, burnt grain note. This has a light tartness to it, though not like that from an infection or wild-bugs. This has an amply toasted, whole grain bread flavor to it as well as some light, breakfast-roast coffee notes; this last even provides a touch of burnt acidity. Thee is a slight fruitiness to this beer that reminds me of a sort of tart, burnt plum flavor that does not quite reach prune in concentration. The flavor is not as weird as the aroma would suggest, but this still seems a bit of a sloppy brew overall."
