Wine makers can't stand Brettanomyces, most brewers don't want anything to do with it either. Yet, there's a group of brewers who might bathe in the stuff given the chance. To them, Brettanomyces represents a departure in the road, the proverbial point where the concrete jungle ends and real wilderness begins. For this journey, we produced a beer with a 100% Brettanomyces fermentation. The idea was sparked by a conversation with Peter Bouckaert of the New Belgium Brewing Company. The notion of a purely wild fermentation came to fruition when Peter stopped by our little brewery to brew this collaborative ale. This wild yeast ale is made from 2 Row, Flaked Oats, Carapils, and Munich Malts. We added a couple handfuls of German Magnum Hops and let the Brettanomyces Yeast loose. The beer is 6.3% ABV and is served unfiltered. The fermentation produced a ton of fruity esters with Pineapple being the most common in the beer. We have completed this exploration for now, and look forward to reaching this trailhead again where undoubtedly our next journey will begin. "10.31.04 sample(s) from 750ml bottle at Heavyweight open house. I came back to this a couple times because it’s good. Bright, the color of the sun, fizzy white head. Funky bretts on nose and all over the flavor. Ripe and young pear, pineapple. Sweet and lightly tart. Soft body. It’s fresh and lively and fun."

"This one smells kind of like rotisserie chicken, although the smell is probabloy more akin to the herbs on the chicken, after someone mentioned chicken (either Scott or Tom, I think) I couldn’t think of anything else. White pepper, herbs, malty body. Pears, apples and a tartness that is obvious, but not overwhelming."

"Hazy golden pour with a large loose white head. Very carbonated giving a really lively mouthfeel. This one strikes me as a weird cross between cider and gueze. Has a tart green apple meets lemonade quality to it. Whatever it is it works. Another experimental winner from Mr. Arthur!"

"My mate Matt came over last night with this bottle in-hand, and was kind enough to share it while we watched such awful movies as "Faster Pussycat... Kill! Kill!" and "Manos: The Hands Of Fate". And the while those movies are infamously horrible (so much so that they're hillarious!), there was no denying that this beer was quite excellent.
Brett is a funky yeast, and seems like it imparts a different flavor profile to each and every beer -- only rarely repeating itself. In this case, this came across both musty and fruity, funky and almost "tropical" (papaya? pineapple?).
Quite enjoyable, especially considering that this topped off a very busy day of either brewing or walking around the nearby Adams Avenue Street Fair (where groups like Barefoot Hockey Goalie played highly-enjoyable sets of eclectic rock et al).
Dry in the front, that sweetens as it goes to the back of your mouth and down the hatch. A bit of sour puckering in the back-end, that I think only improves the already excelelnt flavor profile and overall drinkability.
If the good folks at New Belgium and Pizza Port can somehow make this more often than an one-off brewing session, this could someday be considered something worthy of being compared to the eccentric Saisons of Fantome. But in the meantime, this definately a winner in my book. Recommended.

"Orange gold color, slightly hazy. Very large sized white foamy head. A bit of a gusher and foamer on opening. Aroma is fruit, must and bretts. A medium bodied Belgian ale. Lots of bretty, cheesy flavors and all that musty, barnyardy and leather flavors that one would expect from a bretty Belgian ale. Very smooth and drinkable. It seems to have mellowed a little with some bottle aging, if the earlier reviews are any indication. With all that bretty action, there is still a nice malt and hops profile in this beer, it sort of hidden and subdued buts its there. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet."
