In February 1994, after 18 months of research, Unibroue launched La Fin du Monde (the end of the world). It is a 9 percent alcohol, triple fermentation beer. This type of beer was originally developed by the monks of the Middle Ages to be served on special occasions. La Fin du Monde is a deluxe beer made by triple fermentation and a unique way of straining the yeast. This method produces an unexpectedly subtle flavour. With its champagne-like effervescence, it has a vigourous presence in the mouth, which accentuates its strong personality. Slightly tart, with the balanced flavours of wild spices, malt and hops, it belongs to the class of great Trappist beers and, in this regard, is a North American first. At meals, it can replace white or red wines and enhances the flavour of most dishes. This beer is brewed to honour of the great explorers, who believed they had reached the end of the world when they discovered America.

"Sampled from a bottle that poured a lovely hazy yellow orange with effervescent carbonation and small bright white head. The aroma is of musty yeast and banana. The taste is sweet and sour, with coriander, banana, and lemon peel with a long, dry finish that is very nice. The mouthfeel is acidic, but very smooth. This is a remarkably drinkable beer. I'm cellaring a few of these - I'd love to see what some age will do. "

"My favorite beer. I drink it straight from the bottle, so please keep this in mind. It's like a spicy root beer. Nice name ("The End Of The World") and just an overall wonderful experience from taking the bottle out of its 4-pack carrier all the way to staring at the yeast stuck on the bottom after I've poured out the last drops. According to Chinese Astrology and the Mayan Calendar, the world is supposed to end in 2012. While I don't think it's going to 'end' per se, I do think there's going to be some great transformation, what with all the global warming and energy-related issues these days. Should there be some sort of catastrophe, I've already got a case of the 25-ounce, cork-topped bottles stored away (there's yeast in the bottle, making it great for aging) and I'm certainly prepared for the "End Of The World."

"Presentation: It was poured from a 750ml bottle that is corked and caged into a chalice.
Appearance: It has a hazy body with a light golden amber color with a pale orange hue. The head is smooth, thick and creamy with good retention. It has a creamy off white color and it leaves behind soft lacing as it is slowly sipped down to the bottom of the glass.
Smell: The aroma is full and fruity. There is sweet orange citrus and spicy character with a big hit of yeast and tropical fruits like pineapple.
Taste/Mouth feel: It has a sweet rich and fruity malt and yeast flavor up front. Tropical fruit like pineapple and guava are noted. Soft spices come out and the alcohol starts to warm things up. Hops add a light citrus and leafy flavor before the yeast comes back out and turns powdery and slightly dry in the slow lingering finish. The texture is smooth and creamy with perfect carbonation for the medium body.
Notes: Outstanding and wonderfully complex with great drinkability.

"A very hazy golden body, a thick off white cap fueled by continuous carbonation stayed until the end. Rather complex it has hints of cloves, banana, fruits, and other spices, producing a slightly spicey-sweet flavor. A hearty beer that finishes nicely. "

"This very fine example of a triple poured a pleasant cloudy golden orange with a very nicely packed off-white head and it had some terrific lacing. The aroma was of heavy malt and strong citrus and alcohol, very pleasing.
The du Monde was a quite thick on the tongue, clean and smooth. Malt, citrus, dried fruit and a nice spice seem to dominate the taste buds then you get the alcohol. I like this brew! Great representation of the style.
