"A clear and lively golden blond beer with a large white foam collar on top. Has a bitter hoppy aroma. Feels quite acidic, which tends to fade away quite fast as the beer warms up. The flavor is bitter hop and continues in the aftertaste. Ends up in a warming sensation."

A fairly soft pour summons forth a full three-finger thick, pale, off-white colored head that recedes with a dense textured surface all the while leaving some nice Belgian lace on the sides of my glass. The beer is a honey color, but shows a lightly hazed, bright gold color when held up to the light. Aromas of sweet, honey-infused grain with a backdrop of fruit aromatics like pear, apple, ripe-melon and sweet grape greet my nose. Some sharp spice and phenolics provide a bit of structure with aromas of black pepper, ginger, sweet clove and maybe a hint of anise. There is a light grassy note as well as some crushed malt, cracker-like aromas. I really like the mix of sweet malt, with the fermentation driven esters & phenolics; this is an awfully appetizing balanced beer in the nose.
Only lightly sweet & it has a soft hop character that provides a bit of herbal & hay-like notes that provides an easy balance to the sweetness. The sweetness accents fruit-like notes of ripe pears, a touch of lemon zest and some white-wine grape character. The beer finishes with a sharpness that is a combination of hop bitterness and spicy fermentation character; reminds me a bit of white pepper, ginger and tongue-tickling clove. A zippy carbonation provides a tickle to the tongue and makes this quaffable beer seem a touch lighter on the tongue; this has enough body for sweet, grassy grain notes to stick to the palate after the beer has left my mouth, but nothing so much that this beer ever feels heavy. The beer shows a touch of age around the edges with some light sherry notes and some dusty malt flavors. As the beer warms some honey flavors become a bit more evident, though of a herbal varietal.
Nothing bombastic about this brew, but it is quite solid, eminently quaffable and a beer that is quite enjoyable."

"I believe this is what the monks themselves drink at St. Sixtus (I could be wrong here), notes are from a June 1999 tasting at the market across from abbey
Aroma: The aroma surprisingly hoppy for a belgian ale. Floral scents coming at you followed by the grapefruit. Breakfast in a bottle.
Appearance: The beer pours a cloudy orangy-gold colour with a generous head that is slightly 'off-white' and lingers.
Mouthfeel: The mouthfeel is thin-bodied with heavy carbonation, yet nothing champagne like. There is a bitterness on the tongue reminiscent of a well-hopped beer.
Flavour: Another Westvleteren product that the masses are clamouring for. A lovely combination of citrusy notes with hops titillates the tongue. The sweetness causes a craving for the brew, and the bitter finish leaves one satisfied.
Overall: An excellent choice in a Belgian ale, definitely worth seeking out.

"Thanks goes to Brad for selling his soul and crushing those monks wishes by paying an ungodly ammount of cash, which he wired to Belguim (dunce) amongst other things, to get a set of Westy's to drink off of some beerpimp on EBay. Poured an amazingly colossal huge white head which ended up looking like a giant nipple. Murky brownish orange and lots o' floaties. Awsome lacing...left large remnant rings in the glass. Aromas consisted of slight banana, that hard christmas candy that your Grandma leaves out in the living room, soft lemon, fruity yeasts and a slight spice. A very soft, fresh, complex aroma that takes time to figure out. Tastes pretty mild with lots of yeast, something that seems like wheat, and a very slight citrus note. Don't forget a bit of soapy flavour and some unknown flavour too. Really gassy! Pretty weak on the mouthfeel, but there is a harsh watery bitterness that seems out of place. Soft and smooth. Light to medium bodied. Too watery."

"This beer pours with a massive 3 inch head that slowly settled down to a quarter inch of foam floating on top of my brew, the body of this is a opaque brown with a hint of yellow and small brown flavor nugets floating through out, a very nice looking beer. Yeast and wheat dominate the aroma with a slight sour and banana hiding in the background, this smells very similar to a hefe with out the spice. Just like in the smell wheat and yeast dominate the taste, making this beer very light and refreshing, there is what I think is a very slight grape juice flavor hiding under all the yeast it's very hard to pick up. The mouth feel is very soft and powdery, and after taste is very bitter. I'm very glad I picked this beer up off of E-Bay because its a once in a life time beer for me, and it wasn't disappointing but it sure didn't wow me for the absurd price I had to pay, so here's hoping the 8, and 12 make it worth the price.
