A neo-lambic ale that goes through both a yeast and bacteria fermentation and is then aged on oak chips and 400 pounds of Delaware peaches. This beer is very tart and complex. It arrives cork-finished and bottled-conditioned in champagne bottles.

    Beer number three in a killer July 09 Super Secret Sour State Line Tasting (SSSSLT) featuring (first to last by my counts): Supplication, Consecration, La Folie, Dissident, Cuvee de Castleton, Red Poppy, Lambic de Hill, Festina Lente, Panil. Poured with a pale peachy color, goldenish too. The head was decent, some good invigorating carbonation present. Strong peach aroma, quite strong. The nose was incredible, clearly the best aspect of this beer. The flavor followed the aroma, strong peaches, sour notes, slight wheat bite in the finish. Flavor was unfortunately a tad on the watery side, was hoping for a bit more. A strong man’s Festina Peche, but the flavor wasn’t big enough to support it. Thanks so much, Bert, for this great opportunity at a DFH rarity! An awesome tasting!

    Pours with a slightly cloudy, light orange body wtih no head or lacing. Tart and sour wtih a nice barnyard and some lemony notes and a touch of underlying sweetness in the nose. Light, crisp and dry.

    10.31.04 750ml bottle. Another treat from an unknown benefactor at the Heavyweight open hosue. Light in color, golden; big-time head of white foam. Aromas of fruit salad syrup, peach. Sour and tart flavors dominate Shockingly fresh tasting, unripe fruits, sharp and crisp. A very pleasant surprise -- not your typical DFH brew, whatever that is.

    Looks like I’m going against the grain on this one. First the bottle opened with authority and had good carbonation. Poured a hazy light honey colored brew. Tart but not on the level of a Cantillon or Oud Beersel.Not getting much peach flavor but it was enjoyable none the less.

    Lambic. Bottle at Cooperstown. Light yellow in color with a little white head. Peach aroma and nice carbonation. Sour and tart finish. Enjoyable. Nice.

    An interesting brew to say the least. Bright cider like color with not much head. Mostly sour peach aroma. Taste is tart sour peach which isn’t bad but if you want beer, this is missing some key ingredients, like hops maybe. It does have a somewhat warming taste from the 7% I suppose but somehow inlike any Lambic I have tasted. Leave it to DFH for that, as usual.

    Strange brew. I really hope to get my hands on another bottle, and age it for a while, it was simply too young right now. Carbonation has failed to form, and I was left with a lambic that had the consistency of apple juice. Only a very fine layer of head formed on a very rough pour, and then it quickly disappeared. Aroma is funky, brett and peaches, as well as a grass-like aroma. Mouthfeel is smooth, uncarbonated, and almost slick. This would definitely benefit from some carbonation. Flavor is stellar, mouthpuckering tartness, with brett, mustiness and peach notes, and tons of that great lactic sourness. Carbonation would bring this beer up to stellar numbers. If you obtain a bottle, let it sit in the cellar for at least a year.

    artwork designed by Sam himself. The "Festina Lente" poured a slightly hazy, light pink, golden color and no head or lacing. This is very young right now with barely any carbonation, but you can still tell this is going to be a winner! Uncarbonated, sour peach taste this is terrific and a nice treat while at the brewpub. Not sweet like the Lindemans, this is the best "Lambic - Fruit" beer i've had to date. Thanks Sam! (Rerate, Draft @ Grey Lodge 2/2/04) carbonation is beginning to develop and mine formed a head when poured.
