Casimir is a smoked wheat ale inspired by the traditional smoked Polish style grodziski. The brewers smoked about 600 pounds of wheat at a Polish fish market using old Bourbon County Brand Stout barrel staves and added caraway seeds and two types of rye to emulate rye bread. The result is a deep mahogany ale that is darkyet sessionable. The powerful smoky notes are cut subtly by the spice of the caraway seeds and rye, finishing slightly dry in a smooth body. Casimir is your reminder to use your days-off wisely, head to your local pub, and raise a pint to General Pulaski. With a massive Polish population, second only to Warsaw, Chicago holds the name Casimir in high regard. Chicagoans know Casimir Pulaski as the man that gave them that extra day-off from school when they were young. All of Polish descent, Brian, Mike, and Jason wanted to thank this Revolutionary War hero for all the extra time he gave them as kids in the best way they knew possible - by brewing a beer in his honor.

    New brewpub opened in our area with 50 beers on tap, mostly high-end, hard to find local brews. They happened to have a couple of the Goose Island Fulton & Wood offerings on tap and this beer paired with a charcuterie platter was just the ticket. I'm Polish to boot - how could I not order this beer? Deep, dark coloring served in a stemmed glass with a short head. Kind of the visual antithesis of what you'd expect if someone told you you were getting a wheat beer. Aroma was lightly smoked, not overpowering, mixed very well with the rye and caraway seed. Tastes exactly like it smells. The light wheat body gives a nice texture for the light smoke flavors up front. As you reach the finish the caraway seed notes really become pronounced and accentuate the rye. It's liquid rye bread in a glass.
