A French style Christmas beer. Expect a light amber beer with red tints that is malt forward with noticeable yeast flavors of white pepper and citrus from an authentic French ale yeast. Slight herbal hop note in the background, with a spicy, citrusy, peppery aroma.

Bottle. Deep reddish copper body with a large yellow tinted khaki head. The doughy nose is sweet with some molasses and floral notes. There is also some leather. This tastes fairly sweet at first with the molasses character, then it moves to leather and salt. There is also some pecans throughout, especially in the aftertaste. The body is highly carbonated, almost annoyingly so with lots of fast moving bubbles. There is a strong herbal, nearly medicinal flavor as this one opens up. You can tell that this is a big warming beer, but the alcohol is well hidden. A little sweet for my tastes.

2012 Biere de Noel version. This one starts off malty sweet with a bit of peppery yeast. Dries out nicely in the finish though with a bit of fruity tartness/bitterness. Should pair nicely with Thanksgiving or Christmas dinner.

pours a dark amber with a massive head that takes its time. Aroma is very strong, hints of clove, citrus, and bannanas. Taste is kinda like a farmhouse saison with added cloves and a sickly sweet citrus. Finishes off like you never drank it. Fairly metallic. Nothing much to write home about but it is still pleasant to drink. Somewhat an aquired taste. (Just wish they brought back the 2009)
