Not all things are deserving of morose non-sequitur and periled verse. Some things are quite simple indeed. The product of our locale, this spontaneous beer was made with Asheville city water, Riverbend Malt barley and wheat, house-aged hops, and the tidings of the air around us. Left to ferment in the open air, beneath our taproom peach trees, the beer was finished out in neutral oak barrels for one year before laid down to condition in bottles for over 6 months. The nose on this beer is special, filled with juicy peach fuzz, whipped almond paste, and well-aged chenin blanc wine. The culture will continue its residency at Burial by taking over our Brunello foudre and continuing to live in barrel, where a 3-year blend awaits us next year

    Aroma: 7 | Appearance: 6 | Mouthfeel: 6 | Flavor: 7 | Overall: 6

    Pours clear topaz, minimum eggshell head. Aroma features tart and sour and slightly sweet stone and citrus. Flavor gives tart stone and citrus fruit, a hint of malt. Texture offers OK body and peppy fizz. A happy symptom.
